Cream of celery soup

    Celery provides wonderful flavour in this gorgeously simple soup. A thick, creamy vegetable soup that is very tasty!

    Serves: 3 

    • 30g butter
    • 1 small onion, finely chopped
    • 1 large potato, chopped
    • 250g chopped celery
    • 1 chicken stock cube
    • salt and pepper
    • a dash of nutmeg
    • cream to taste

    1. Melt butter in saucepan. Turn heat to low. Add onion, potato and celery and fry gently for about 5 minutes. Stir to prevent sticking.
    2. Cover with hot water; add salt, pepper, nutmeg and crumbled chicken stock cube. Bring to the boil. Cover and simmer on low till vegetables are cooked. This only takes 10 to 15 minutes. Blend soup in blender a little at a time. Add cream to taste just before serving.

    This soup is delicious, we did not include the nutmeg, we added a clove of garlic and served with garlic bread topped with melted cheese. I would highly recommend this recipe.  -  31 Dec 2013

    i didnt add cream as it was creamy and rich with the butter  -  22 Aug 2017
