Easy beef curry

    This is an easy curry that is simple enough to make any night of the week. Cubes of beef are combined with pak choi, potatoes and carrots for a hearty curry that is flavoured with ginger, garlic, mustard and curry powder. Cream adds a special richness. Serve over rice.

    Serves: 4 

    • 550g rice
    • 1 teaspoon oil
    • 1kg beef, cut into cubes
    • 1 teaspoon plain flour
    • 2 large onions, chopped
    • 1 pak choi, chopped
    • 2 potatoes, peeled and diced
    • 2 carrots, chopped
    • 1 teaspoon minced garlic
    • 1 teaspoon minced ginger
    • 600ml beef stock
    • 1 teaspoon mustard powder
    • 1-2 tablespoons curry powder
    • 200ml cream

    1. Cook the rice by your usual method. Meanwhile, place a pan with the oil over medium heat.
    2. Dust the beef with the flour, then add to pan. Cook for five minutes, or until beef is browned, then add onion, pak choi, potatoes and carrot.
    3. Cook for a further five minutes then add garlic, ginger, beef stock, mustard powder and curry powder; stir. Add cream and stir.
    4. Leave to simmer for 10 minutes, stirring every now and then, or until potatoes and carrots are soft.
    5. Serve with rice.

    Lovely tasting curry and very simple to make but the first time I did it the beef was hard and chewie so have been using the slow cooker and leaving it for a few hours  -  06 Oct 2015


    I made this and it was lovely, I chopped 1 red,1green,1 yellow peppers, chopped apples and a load of sultanas in with it  -  27 Aug 2016
