About this recipe:This spicy dal is easy to make. You can either soak the lentils overnight, or you can boil them in water for 30 minutes and then drain before adding them to the recipe. For a lentil soup add a little more stock and do not reduce as much. For a vegetarian dish, use vegetable stock instead.
2 onions, finely chopped
2 carrots, finely chopped
6 cloves of garlic
2 teaspoons ground ginger
2 tablespoons ground cumin
1 teaspoon ground cardamom
190g green lentils, soaked overnight
1L chicken stock
60g mixture of freshly chopped basil, mint and coriander

Cook onions, carrot and garlic for 3 minutes in some oil. Add ginger, cumin and cardamom and cook for further 2 minutes.
Add the soaked lentils and stock, simmer for 1 hour or until mixture reduces to a thickish consistency.
