Double Chocolate Biscuits

    These chocolate biscuits are moreish and addictive. This makes a huge batch, so it is great for cake sales, school fetes or for filling the biscuit tin at work. You can use half milk chocolate, half white chocolate, if desired. You can freeze the biscuits after baking; simply defrost at room temperature.

    Makes: 50 biscuits

    • 500g butter
    • 300g dark brown soft sugar
    • 440g caster sugar
    • 4 eggs
    • 2 teaspoons vanilla extract
    • 500g plain flour
    • 775g fine oats (blend in food processor)
    • 1 teaspoon salt
    • 2 teaspoons baking powder
    • 2 teaspoons bicarbonate of soda
    • 680g chocolate chips
    • 500g grated Cadbury chocolate

    1. Measure oatmeal. Cream the butter and both sugars. Add eggs and vanilla. Mix together with flour, oats, salt, baking powder and bicarbonate of soda.
    2. Add chocolate chips and grated chocolate.
    3. Roll into balls, and place 5cm apart on a baking tray. Bake for 10 minutes at 180 C / Gas 4.
