1 onion, finely chopped
2 cloves garlic, crushed
2 medium sweet potato, peeled and cubed
2 teaspoons hot sauce (or 1 teaspoon chilli powder)
1 tin whole kernel sweetcorn, drained
4 tablespoons cornflour
2 teaspoons baking powder
1 teaspoons salt

Preheat oven to 180 C / Gas 4.
Heat oil in pan, add onion and sweet potato with hot sauce, and lightly fry for 3 minutes. Add sweetcorn. Remove from heat.
Beat eggs together and sift in the cornflour, baking powder, salt and pepper. Add whatever else you feel like (cubed chicken or ham, etc.). Add the mixture from the frying pan.
Pour into a greased 20-25cm round pie dish and bake in pre-heated oven for 1 hour (or until cooked). Serve with fresh garden salad.
