About this recipe: A delicious quiche indeed, which is very forgiving and easy to make. There's no pastry, so you needn't worry about that. You can also add other ingredients to taste - cubed chicken, ham, mushrooms, bacon, etc. Enjoy!

    • 2 tablespoons oil
    • 1 onion, finely chopped
    • 2 cloves garlic, crushed
    • 2 medium sweet potato, peeled and cubed
    • 2 teaspoons hot sauce (or 1 teaspoon chilli powder)
    • 1 tin whole kernel sweetcorn, drained
    • 4 eggs
    • 4 tablespoons cornflour
    • 2 teaspoons baking powder
    • 1 teaspoons salt
    • ground pepper to taste
