Delicious Quiche

    A delicious quiche indeed, which is very forgiving and easy to make. There's no pastry, so you needn't worry about that. You can also add other ingredients to taste - cubed chicken, ham, mushrooms, bacon, etc. Enjoy!

    Serves: 6 

    • 2 tablespoons oil
    • 1 onion, finely chopped
    • 2 cloves garlic, crushed
    • 2 medium sweet potato, peeled and cubed
    • 2 teaspoons hot sauce (or 1 teaspoon chilli powder)
    • 1 tin whole kernel sweetcorn, drained
    • 4 eggs
    • 4 tablespoons cornflour
    • 2 teaspoons baking powder
    • 1 teaspoons salt
    • ground pepper to taste

    1. Preheat oven to 180 C / Gas 4.
    2. Heat oil in pan, add onion and sweet potato with hot sauce, and lightly fry for 3 minutes. Add sweetcorn. Remove from heat.
    3. Beat eggs together and sift in the cornflour, baking powder, salt and pepper. Add whatever else you feel like (cubed chicken or ham, etc.). Add the mixture from the frying pan.
    4. Pour into a greased 20-25cm round pie dish and bake in pre-heated oven for 1 hour (or until cooked). Serve with fresh garden salad.

    WOW this recipe was awesome!!! I am normally NOT a quiche fan but felt like something different for supper was easy. Added bacon  -  06 Feb 2012


    This turned out really well. I used sweet potato, mushrooms, corn and onion for a nice vegetarian twist. I didn't have any chilli powder so I just used taco seasoning and that worked out well too. Probably wouldn't hurt to add another egg. Was great in my lunch because I'm at high school and we dont have microwaves or sandwich makers so I could still eat it cold.  -  02 Nov 2009  (Review from Allrecipes AU | NZ)
