Chocolate Chunk Macadamia Brownies

    These chocolaty and nutty brownies are extremely decadent and moreish! The brownies are studded with pieces of chocolate and macadamia nuts. You could use other types of nuts, if desired. Use the best chocolate you can afford!

    Serves: 16 

    • 200g quality plain chocolate, broken into pieces
    • 250g butter, chopped
    • 375g dark brown soft sugar
    • 4 eggs
    • 5 tablespoons cocoa powder, sifted
    • 160g plain flour, sifted
    • 1/4 teaspoon baking powder
    • 125g quality plain chocolate, broken into pieces
    • 50g macadamia nuts, halved

    1. Preheat oven to 160 C / Gas 3. Place 200g chocolate pieces and butter in a saucepan over low heat and stir until smooth. Allow to cool slightly.
    2. Place sugar, eggs, cocoa, flour and baking powder in a bowl. Add the melted chocolate mixture, whole chocolate pieces, macadamia nuts and combine. Do not overwork the mixture as it can make the brownies tough.
    3. Pour mixture into a 20cm (8 in) square tin lined with baking parchment.
    4. Bake for 50 minutes or until set. If checking with a skewer, the chocolate melted through will be gooey, but it will be cooked.
    5. Cut into slices in tin. Serve warm with cream or great cold! Enjoy!
