Cheat's Morroccan Lamb with Rocket and Couscous

    Steak and chips won't impress a girl you've invited over for dinner. If you are a bachelor looking for an easy but totally impressive recipe, this is it!

    Serves: 2 

    • 1 Morroccan marinated lamb steak (from the butcher or supermarket)
    • 1 box Morroccan-style couscous
    • knob of butter
    • 1-2 big handfuls rocket
    • extra virgin olive oil
    • salt and pepper
    • tzatziki dip

    1. Pan fry the lamb steak, turning once until cooked how you like it. Then let it rest.
    2. Prepare the flavoured couscous according to the packet directions. Add a knob of butter at the end to give it more depth of flavour.
    3. Slice the lamb into strips. (If you can get away with medium rare, it will look classy!)
    4. Mix the rocket with a drizzle of olive oil and salt and pepper and arrange it on the bottom of the plate in a circle.
    5. Spoon the couscous on top of rocket. (If you have a ramekin, you can stuff it in the ramekin then invert it onto the plate to make it look neater.)
    6. Arrange the lamb slices on the couscous and spoon over some tzatziki. Take all the credit and enjoy the spoils of your labour...
