Bread Pudding Loaf

    Nothing was wasted in my house growing up, so leftover bread was always made into a pudding. This is an easy bread pudding that is delicious hot or cold, and it's a little different than your typical bread and butter pudding.

    Makes: 1 loaf bread pudding

    • 225g day old bread
    • 85g currants or sultanas, or both
    • 60g sugar
    • 1/2 teaspoon mixed spice
    • 1 tablespoon milk
    • 1 egg
    • 85g melted margarine or butter

    Prep:40min  ›  Cook:1hr  ›  Ready in:1hr40min 

    1. Soak the bread in cold water for at least 30 minutes.
    2. Squeeze out all the water in a clean tea towel.
    3. Place soaked bread into a bowl and add dry ingredients. Mix well.
    4. Add melted margarine or butter, egg and milk and beat well.
    5. Put into greased loaf tin and bake for about 1 hour at 200 C / Gas 6 in centre of oven.
    6. When cooked, place tin on wire rack for about 5 minutes before turning out.

    Soaked the bread in cold strong tea. Gave the bread pudding a darker colour and more flavour. Will make this again as it is the first bread pudding I have made successfully!Perhaps I didn't squeeze enough liquid out on other occasions - previous efforts were always too wet and didn't cook properly.     I didn't squeeze out enough water so the pudding was rather soggy when I turned it out and nearly binned it. Left it on the side overnight and the following morning it was delicious... :D  -  07 Oct 2016
