This is an easy Christmas cake that you can make at the last minute, as there's no need for maturing. Simply soak the fruit overnight, and the next day you'll be rewarded with a cake in less than a few hours.
This really was easy! I changed the recipe a little to suit the ingredients I had on hand. I only had 1 1/2 cups of orange juice and no rum essence, so I used the orange juice and added 1/4 cup of rum, as well as the brandy and almond essence. I took the advice of one of the reviewers and added spice. 1 tsp ground nutmeg, 1 tsp cinnamon and 1 tsp mixed spice. I soaked the fruit for 2 days. a wonderfully easy christmas cake to prepare.
