About this recipe:This is an easy Christmas cake that you can make at the last minute, as there's no need for maturing. Simply soak the fruit overnight, and the next day you'll be rewarded with a cake in less than a few hours.
425ml orange juice
1 teaspoon pure almond extract
1 teaspoon rum extract
1kg mixed fruit
250g plain flour
2 teaspoons baking powder
90g butter, softened
190g sifted icing sugar
2 tablespoons orange juice
1/2 teaspoon grated orange zest

Mix all liquid ingredients for the cake together. Put fruit in bowl, add the liquid, put in fridge and leave to soak overnight.
Next day, preheat oven to 150 C / Gas 2.
Add the flour and baking powder to the fruit mixture. Mix all together until combined, do not over mix.
Pour into a baking dish, bake for 90 minutes to 2 hours.
For the icing: Combine all icing ingredients and spread over cooled cake.
