Last-minute Christmas cake

    This is an easy Christmas cake that you can make at the last minute, as there's no need for maturing. Simply soak the fruit overnight, and the next day you'll be rewarded with a cake in less than a few hours.

    Serves: 10 

    • 425ml orange juice
    • 60ml brandy
    • 1 teaspoon pure almond extract
    • 1 teaspoon rum extract
    • 1kg mixed fruit
    • 250g plain flour
    • 2 teaspoons baking powder
    • Icing (optional)
    • 90g butter, softened
    • 190g sifted icing sugar
    • 2 tablespoons orange juice
    • 1/2 teaspoon grated orange zest

    Prep:12hr  ›  Cook:2hr  ›  Ready in:14hr 

    1. Mix all liquid ingredients for the cake together. Put fruit in bowl, add the liquid, put in fridge and leave to soak overnight.
    2. Next day, preheat oven to 150 C / Gas 2.
    3. Add the flour and baking powder to the fruit mixture. Mix all together until combined, do not over mix.
    4. Pour into a baking dish, bake for 90 minutes to 2 hours.
    5. For the icing: Combine all icing ingredients and spread over cooled cake.

    This really was easy! I changed the recipe a little to suit the ingredients I had on hand. I only had 1 1/2 cups of orange juice and no rum essence, so I used the orange juice and added 1/4 cup of rum, as well as the brandy and almond essence. I took the advice of one of the reviewers and added spice. 1 tsp ground nutmeg, 1 tsp cinnamon and 1 tsp mixed spice. I soaked the fruit for 2 days.     a wonderfully easy christmas cake to prepare. Tastes great for a cake that has little time or effort into making it!!! would suggest though perhaps adding some nutmeg and cinnamon to add that extra christmas taste/feel to it, but big thumbs up from this family!!  -  11 Nov 2010  (Review from Allrecipes AU | NZ)
