Quick sweet and sour chicken

    You can make this sweet and sour chicken in the time it takes to get a takeaway! Ready in under 30 minutes. You can use chicken breast or thigh, or a mixture. Just add rice to make a complete meal.

    Serves: 4 

    • 1 tablespoon oil
    • 500g boneless chicken, cubed
    • 1 onion, cut in wedges
    • 425g tin pineapple pieces
    • 45g sachet chicken noodle soup mix
    • 2 tablespoons white vinegar
    • 1 tablespoon dark brown soft sugar
    • 250ml water
    • 1/2 red pepper, chopped
    • 1/2 green pepper, chopped

    Prep:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Heat oil in pan and brown chicken and onion.
    2. Add pineapple pieces and their liquid, soup mix, vinegar, dark brown soft sugar and water. Bring to the boil. Cover and simmer for 20 minutes or until chicken is cooked.
    3. Add pepper for the last 5 minutes of cooking. Serve with rice.
