Jimmi and Claire's triple chocolate cookies

    My girlfriend and I over the past year have made a wide selection of cookies. We have tried and tested a whole range of recipes, and this combination of ingredients I adapted and made is by far the best!!!! Definitely for a sweet tooth!!!!

    Serves: 12 

    • 220g butter
    • 380g caster sugar
    • 4 tablespoons light brown sugar
    • 2 eggs
    • 1 tablespoon vanilla extract
    • 310g self-raising flour
    • 1 pinch salt
    • 150g milk chocolate chunks
    • 150g white chocolate chunks
    • 150g dark chocolate chunks

    1. Preheat the oven to 180 C / Gas 4.
    2. Cream together the butter and sugars. Then mix in the 2 eggs and vanilla extract. When mixture is fully mixed togther, sieve in the flour and salt gradually and stir. Put mixture in the refrigerator for 15 mins, then stir in all of the chocolate. Use a 10ml spoon to place the dough on ungreased baking trays.
    3. Bake for 10 to 14 mins (depending on the size on each cookie). Allow the cookies to cool on the baking tray for 5 mins, then transfer to wire rack for a further 5 mins.
