About this recipe: This fruited bread is simple to make and quick to throw together. It's high in fibre, low in fat and tastes delicious. Enjoy anytime of the day or pop into packed lunches.


Serves: 10 

  • 165g sultanas
  • 160g chopped dates
  • 375ml skimmed milk
  • 125ml orange juice
  • 2 tablespoons caster sugar
  • 65g All Bran cereal
  • 190g self-raising flour, sifted
  • 65g wholemeal flour, sifted
  • 1 teaspoon mixed spice

  1. Preheat oven to 200 C / Gas 6. Line a loaf tin with baking parchment.
  2. Combine together sultanas, dates, milk, orange juice, sugar and cereal. Let stand for 30 minutes.
  3. Stir flours and mixed spice into the fruit mixture and pour into prepared tin.
  4. Bake in preheated oven for 75 minutes. Check the loaf regularly, if it browns too fast, cover loosely with foil and return to the oven.
  5. Let cool in tin for 30 minutes, before turning out onto a wire rack. Serve sliced with butter or honey. Store any leftovers in the fridge in hot or humid weather.

Looking for a fruit cake recipe low in sugar as my daghter has recently been diagnosed with type 1 diabetes, so i tried this and it was amazing. I did have to tweak it to use items i had in my cupboard, eg oat bran instead of all bran and i threw in dried apricots, lowering the amount of sultanas. So it is well worth giving it a go. - 17 Sep 2016
