About this recipe: This crumbed chicken is not fried or baked, but microwaved! It's simple, quick and easy. Chicken thighs are dipped in egg, then dredged in a cornflake-cheese crumb, before being microwaved to perfection.


Serves: 4 

  • 4-8 chicken thigh fillets (depending on size)
  • 60g cornflakes, crushed
  • 115g grated cheese
  • 1 (400g) tin chopped tomatoes
  • fresh parsley or chives, chopped to taste
  • cheese for garnish
  • 1 egg
  • pepper to taste

  1. Place crushed cornflakes, cheese and parsley in a bowl. Stir to combine.
  2. In a separate bowl, beat the egg.
  3. Dip each chicken thigh in egg, followed by the cornflake crumb. Make sure you coat it all over. Place onto microwave-safe plate(s).
  4. Microwave for 5 minutes. Rest for 1 minute, then microwave for an additional 4 minutes.
  5. Top each chicken thigh with some tinned tomatoes, cheese and peper. Microwave for 1-2 more minutes to melt the cheese.
