This crumbed chicken is not fried or baked, but microwaved! It's simple, quick and easy. Chicken thighs are dipped in egg, then dredged in a cornflake-cheese crumb, before being microwaved to perfection.

4-8 chicken thigh fillets (depending on size)
60g cornflakes, crushed
115g grated cheese
1 (400g) tin chopped tomatoes
fresh parsley or chives, chopped to taste
cheese for garnish
pepper to taste

Place crushed cornflakes, cheese and parsley in a bowl. Stir to combine.
In a separate bowl, beat the egg.
Dip each chicken thigh in egg, followed by the cornflake crumb. Make sure you coat it all over. Place onto microwave-safe plate(s).
Microwave for 5 minutes. Rest for 1 minute, then microwave for an additional 4 minutes.
Top each chicken thigh with some tinned tomatoes, cheese and peper. Microwave for 1-2 more minutes to melt the cheese.
