Cheese and Bacon Potato Bake

About this recipe: A simple, yet delicious dish that's super-quick to throw together. Frozen potato wedges are baked with double cream, Cheddar cheese and bacon.


Serves: 6 

  • 1 (1kg) packet frozen potato wedges
  • 600ml double cream
  • 2 handfuls diced bacon
  • 2 handfuls grated mature Cheddar cheese

Prep:10min  ›  Cook:50min  ›  Ready in:1hr 

  1. Preheat oven to 180 C / Gas 4.
  2. Place all the potato wedges into a shallow baking dish.
  3. Pour in the cream until it covers the top of the wedges.
  4. Bake in preheated oven for about 30 minutes, then sprinkle with cheese and bacon.
  5. Return to oven for an additional 20 minutes or so (depending on the oven).
  6. Once the cheese is melted and the wedges are tender, it's ready.

Altered ingredient amounts. I used slightly less wedges (they were spicy ones too) and added bacon lardons which was easier than cutting some bacon up! I have to admit to using more than 2 handfuls of cheese (but not mature)! - 10 Dec 2010
