About this recipe: This bread is simple to make and is packed full of flavour. Bread dough is enriched with eggs, olive oil and feta cheese, before being shaped and baked.


Makes: 2 -3 loaves

  • 500g bread dough (made with bread mix)
  • 2 eggs
  • 200g feta cheese, crumbled
  • 2-3 tablespoons olive oil
  • 2-3 tablespoons plain flour or as needed

  1. Place dough in large mixing bowl. Using your fingers, make a well in the centre. Break eggs into the well, then add feta and 1 tablespoon olive oil. Knead with swift, firm movements until all ingredients have been thoroughly combined with the dough.
  2. Add flour and knead until dough is stiff. Separate dough into two or three pieces. Shape each piece into a round loaf; press level with the palm of your hand. Place on oiled baking tray and bake at 180 C / Gas 4 for 45-50 minutes.
