    About this recipe: A simple, low fat icing that has more volume than the traditional icing. Egg whites are beaten with sugar syrup until light and fluffy. Use to decorate cupcakes, cakes or muffins.

    Ingredients
    Serves: 30 

    • 500g caster sugar
    • 2 egg whites
    • 150ml water

    Method

    1. In a pan, heat sugar and water until dissolved. Boil rapidly until a single drop of syrup dropped into a glass of cold water forms a soft ball. Let cool.
    2. Meanwhile, beat egg whites until stiff. Gradually pour cooled syrup over the egg whites, beating constantly. Continue to beat until thick and fluffy.
    3. Use to spread over cakes or muffins.
