    About this recipe: An elegant and delicious dessert. This mousse is incredibly rich and chocolaty. Serve in small portions with whipped cream and fresh berries, if desired.

    Serves: 8 

    • 200g dark chocolate (70%+ cacao)
    • 4 eggs, separated
    • 100g unsalted butter, softened
    • 2 teaspoons caster sugar
    • 1 vanilla bean, seeds only

    Prep:30min  ›  Cook:15min  ›  Ready in:45min 

    1. Melt chocolate over simmering water until melted.
    2. Add butter gradually. Stir until well incorporated.
    3. Add egg yolks, one at a time and beat until smooth between each addition. While warm, add the vanilla bean seeds.
    4. In a clean bowl, beat egg whites until soft peaks form. Sprinkle with sugar and continue to beat until glossy.
    5. Gently fold egg whites into chocolate mixture. Pour into small serving dishes. Chill until required. Bring back to room temperature before serving.
