About this recipe: A fantastic way to prepare chicken drumsticks. They are coated in seasoned egg, then dredged in garlic-herb breadcrumbs before being baked to perfection.


Serves: 2 

  • 1 egg
  • 1 spring onion, finely chopped
  • 2 teaspoons wholegrain mustard
  • 3 stale slices bread
  • 1 tablespoon mixed herbs (oregano, sage, thyme and rosemary)
  • 2 teaspoons garlic granules
  • 4 chicken drumsticks

  1. Process bread in food processor to fine breadcrumbs. Add garlic and herbs, blitz again to mix. Transfer to a container with lid.
  2. In a bowl, beat egg, spring onion and mustard. Mix well.
  3. Dip each drumstick into the egg mix and coat well, then dredge in breadcrumb mix. Make sure the drumstick is completely covered in breadcrumbs. Repeat with remaining drumsticks.
  4. Place drumsticks into a wide greased baking dish. Bake at 190 C / Gas 5 for 40 minutes (turning after 20 minutes) or until the crumb is golden and chicken is cooked through.
