Creamy ginger ice cream

    If you love ice cream and ginger, this is the dessert for you! This custard based ice cream is made with fresh ginger, ground ginger, ginger extract and crystallised ginger. It's a delicious treat for any ginger lover.

    Makes: 750 ml approximately

    • 20g ginger root, finely chopped
    • 10g ground ginger
    • 1 teaspoon ginger extract
    • 50g sugar or artificial sweetener, to taste
    • 1 teaspoon glucose
    • 50ml milk
    • 300ml ready-made custard
    • 300ml double cream
    • 80g crystallised stem ginger, chopped

    1. Place ginger root, ginger powder, ginger extract, sugar, glucose and milk in a saucepan. Boil for 5 minutes. Cool by placing saucepan in cold water.
    2. Place custard, cream and boiled ginger in an ice cream maker and churn until stiff (or according to the manufacturer's guidelines). Add crystallised ginger about 1 minute from the end. Serve soft or freeze.
