Spiced Ginger Ice Cream

    A quick and easy recipe with delicious results. Ready-made vanilla ice cream is mixed with crushed ginger biscuits and mixed spice. This goes exceptionally well with Christmas pudding.

    Makes: 2 litres

    • 2 litres good quality vanilla ice cream
    • 200g ginger biscuits, crushed
    • 1 tablespoons mixed spice (or cinnamon and nutmeg) or to taste

    1. Let ice cream reach room temperature, then place into a mixing bowl. Add the ginger biscuits and spices.
    2. Mix together until well blended. Return ice cream to tub and freeze overnight to allow flavours to develop.
