200g ginger biscuits, crushed
1 tablespoons mixed spice (or cinnamon and nutmeg) or to taste

Let ice cream reach room temperature, then place into a mixing bowl. Add the ginger biscuits and spices.
Mix together until well blended. Return ice cream to tub and freeze overnight to allow flavours to develop.
