Mini Christmas Puddings

    These Christmas treats are super-cute and really easy to make. Crumbled fruit cake is mixed with brandy and melted chocolate, formed into balls, then drizzled with white chocolate to resemble mini Christmas puddings.

    Ingredients
    Serves: 50 

    • 700g fruit cake
    • 4 tablespoons brandy or sherry
    • 200g milk chocolate
    • 100g white chocolate, melted
    • green and red jelly sweets, chopped

    Method
    Prep:10min  ›  Cook:10min  ›  Ready in:20min 

    1. Crumble fruit cake into a bowl. Set aside.
    2. Melt milk chocolate in microwave for 30 seconds (depending on the microwave). Add to crumbled cake with brandy.
    3. Once combined, roll into bite-size balls and top with melted white chocolate and chopped sweets (to represent cherry and leaves).

    Easy and fun for a child to make. Everyone loved them. We substituted Ribena and water for the alcohol because they were being taken to school. A great, easy festive recipe.  -  14 Dec 2011  (Review from Allrecipes AU | NZ)
