Courgette Bran Muffins

    These wholesome muffins are hearty, low in fat and high in fibre. They are graced with grated courgettes and poppy seeds. Enjoy anytime of the day.

    Makes: 12 muffins

    • 125g wholemeal self-raising flour
    • 125g self-raising flour
    • 30g wheat bran
    • 1/2 teaspoon bicarbonate of soda
    • 175ml buttermilk
    • 75ml orange juice
    • 2 eggs
    • 110g grated courgette
    • 2 tablespoons poppy seeds

    1. Sift the dry ingredients into a bowl. Add poppy seeds to the courgette and mix into the dry ingredients.
    2. Beat together egg, buttermilk and orange juice and pour into the mixture all at once. Mix until well combined, but do not overmix.
    3. Spoon into a greased 12-hole muffin tin and bake at 180 C / Gas 4 for 20-25 minutes or until cooked (test with a skewer).
