Fresh Mango Salad

    This is a deliciously refreshing salad, which goes well with almost anything. Green mangoes are finely sliced and tossed in an Thai-inspired dressing. It's perfect for summer barbecues.

    Serves: 3 

    • 2 green mangoes
    • Dressing
    • 1 tablespoon sugar
    • 1 lime, juiced
    • 2 tablespoons fish sauce
    • 1 tablespoon sesame or groundnut oil
    • salt and pepper to taste
    • 30g roasted peanuts, crushed
    • I small red chilli, seeded and chopped
    • 2 cloves garlic, sliced
    • 4 spring onions, white parts only, chopped

    1. Cut green mango into long thin shreds (julienne) or coarsely grate. Fry the garlic and onion till golden and set aside
    2. Mix together the garlic, onions, sugar, lime juice, fish sauce, oil and salt and pepper to taste. Stir until the sugar dissolves. Add in the peanuts and chilli.
    3. Toss mangoes with dressing and serve.
