This Italian-inspired bake is not only delicious, but it's also vegetarian friendly. Pre-cooked vegetables are topped with dollops of ricotta and tomato sauce before being baked. Enjoy with garlic bread, if desired.

500g cooked chopped vegetables of your choice
1 (250g) tub ricotta or cottage cheese
4 spring onions, chopped
1 teaspoon crushed garlic
375g bolognese tomato sauce, such as Dolmio's
55g mature Cheddar cheese, grated

Preheat oven to 180 C / Gas 4.
Place vegetables into a lightly greased ovenproof dish. Set aside.
In a bowl, mix together the ricotta with spring onions and garlic. Dollop randomly over the vegetables. Do the same with the bolognese sauce.
Sprinkle with cheese and bake in preheated oven for 30 minutes.
