    About this recipe: This version of Kahlua is just as good, if not better than the real thing. The trick is to let the vanilla bean soak in the alcoholic liquid for 2 weeks.

    Makes: 2 litres

    • 1 litre water
    • 800g caster sugar
    • 500g good quality instant coffee
    • 750ml vodka
    • 1 vanilla bean, split in half lengthways

    1. Bring the water and sugar to the boil and simmer for 5 minutes. Make sure the sugar has dissolved. Let cool for a few minutes.
    2. Add the coffee and slowly bring back to the boil. then add the coffee. Stir in the vodka and add vanilla bean.
    3. Pour everything into a 2 litre bottle (or flagon). Screw on the lid tightly and tip daily for 2 weeks.
    4. After 2 weeks, strain through muslin to remove the vanilla bean. Pour into bottles and store until needed.
