About this recipe:This dish is extremely hearty and packed full of protein. Minced beef is simmered with beans in a chilli con carne spiced tomato sauce. Enjoy with rice, corn bread, tortilla chips or over a jacket potato.
1kg lean minced beef
1 red onion, diced
1 tablespoon cooking oil
1 (41g) packet chilli con carne mix (or chilli powder)
2 (400g) tins chopped tomatoes with chilli
1 (420g) tin bean mix, rinsed and drained
water, if needed to thin sauce

In a large saucepan, heat oil and add diced onion. Saute until soft.
Add mince and cook until brown. Add chilli con carne mix and stir quickly.
Add chopped tomatoes and bean mix. Stir to mix. Cover and simmer for 15 minutes until mince is cooked through. Stir regularly to prevent sticking on the bottom of the pan.
