    About this recipe: These delicious treats taste like muesli. The biscuits are dotted with desiccated coconut and dried fruit (of your choice). Enjoy with a hot mug of tea.

    Ingredients
    Serves: 4 

    • 1 egg, beaten
    • 90g desiccated coconut
    • 60g rice flour (or a mix of rice, soy and buckwheat flours)
    • 1 teaspoon gluten-free baking powder
    • 2 tablespoons golden syrup
    • 125g butter
    • 220g dark brown soft sugar
    • 325g sultanas, chopped dates, almonds, apricots or roasted buckwheat

    Method
    Prep:20min  ›  Cook:10min  ›  Ready in:30min 

    1. Preheat oven to 180 C / Gas 4. Butter a baking tray.
    2. Gently melt butter and golden syrup together. When cool, add beaten egg.
    3. Put all dry ingredients in a large bowl. Add butter, syrup and egg. Mix until well mixed.
    4. Place teaspoons of mixture onto prepared tray. Bake in preheated oven for 10-15 minutes. Keep an eye on them so they don't burn.

    Tip

    For the last ingredient in the list, you can use any combination of sultanas, chopped dates, almonds, apricots or roasted buckwheat.

    This is really a very delicious recipe. I enjoyed making these and find them nice and moist. I made some single biscuits but found that I could make two large ones in my tins I use for a sponge sandwich and today we have eaten all the single ones, my husband liked them too so I will be making more. - 15 May 2016

    I made these exactly as per the recipe, no tweaks. Flavour is nice, but... Warning: 1) Use a baking tray with sides - this recipe does not make "biscuits" as such! 2) The teaspoons of mixture, rather than forming nice cookies, spread everywhere and flow over the edges of a flat tray. This leaves a very, very thin layer of mixture, once baked! These are more like flapjacks, but are definitely NOT biscuits! - 01 Jul 2013
