About this recipe: If you love garlic, this is the dressing for you. A whole head of garlic is blended with olive oil and white wine vinegar. It's the perfect dressing to keep in the refrigerator.


Serves: 30 

  • 1 whole head garlic, peeled (about 18-20 cloves)
  • 1 stem oregano, leaves only or 25g chopped parsley (optional)
  • 1 tablespoon honey
  • 1 teaspoon mustard seeds
  • 1/8 teaspoon chilli
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper, fresh ground
  • 250ml white wine vinegar or apple cider vinegar
  • 250ml grapeseed oil
  • 250ml organic extra-virgin olive oil

  1. Combine all ingredients, except the oil, in a liquidiser and blend until garlic is totally crushed.
  2. While blending, drizzle in the oil in VERY SLOWLY to prevent separation
  3. The mixture should be relatively thick. Once all the oil is mixed in, pour into bottle, seal and refrigerate. Shake well to use and drizzle over salads. Enjoy!
