Lemon Cordial

    This is a great way of making use of lemons when in-season. Lemon juice, lemon zest, sugar and water are combined to make this refreshing summer drink. Enjoy with lots of ice cubes.

    Serves: 20 

    • 800g caster sugar or to taste
    • 1 litre water
    • 1 tablespoon citric acid
    • 1 tablespoon tartaric acid
    • 2 lemons, zest grated (optional)
    • 6 large lemons, juiced and strained

    Prep:30min  ›  Cook:5min  ›  Ready in:35min 

    1. Dissolve sugar in water over heat in a non-aluminium saucepan. Add citric and tartaric acids. Stir to ensure that all is completely dissolved and let cool.
    2. Stir in juice and zest. Bottle into clean, dry bottles. Store in the fridge. Dilute to taste with water, lemonade, fizzy or still mineral water. Makes 2 litres.

    This recipe was not taken from the mentioned 'bible' - it is a very general recipe & one that i have used since my grandmother gave it to me over 25 years ago!
