About this recipe:
This is a great way of making use of lemons when in-season. Lemon juice, lemon zest, sugar and water are combined to make this refreshing summer drink. Enjoy with lots of ice cubes.
800g caster sugar or to taste
1 litre water
1 tablespoon citric acid
1 tablespoon tartaric acid
2 lemons, zest grated (optional)
6 large lemons, juiced and strained
- Dissolve sugar in water over heat in a non-aluminium saucepan. Add citric and tartaric acids. Stir to ensure that all is completely dissolved and let cool.
- Stir in juice and zest. Bottle into clean, dry bottles. Store in the fridge. Dilute to taste with water, lemonade, fizzy or still mineral water. Makes 2 litres.
