350g very ripe strawberries
350g caster sugar

Hull strawberries, lightly rinse and then put them in a glass jar. Add remaining ingredients and seal the jar. Let steep in a cool place out of the sun for 1 month, gently shaking the jar once or twice a day.
Remove the strawberries by gently pouring the liqueur through a mesh strainer into a bowl. Let the strawberries drain well, then transfer the liqueur into a clear glass bottle, using a funnel and a piece of filter paper. Stopper the bottle. Can be used immediately or improves over time.
