Herb Roast Lamb Chops

    This is an incredibly easy dish, which is packed full of flavour. Lamb chops are marinated, then roasted to perfection. For best results, allow the lamb to marinate overnight. Enjoy with potatoes, rice or pasta.

    Serves: 4 

    • 4 thick lamb loin or chump chops, excess fat removed
    • 2 medium red onions, cut in quarters and layers separated
    • 4 medium mushrooms, cut in quarters
    • 12 black olives
    • 2 tablespoons olive oil
    • 250ml white wine
    • fresh coriander or flat-leaf parsley leaves, for garnish
    • For the Marinade
    • 6 tablespoons harissa paste
    • 2 tablespoons olive oil
    • 25g fresh coriander, finely chopped
    • 25g fresh mint, finely chopped
    • 25g fresh flat-leaf parsley, finely chopped
    • 1 lemon, zest grated
    • freshly cracked white pepper, to taste
    • sea salt, to taste

    1. Make the marinade by combining the harissa paste, coriander, mint, parsley, lemon zest, white pepper, salt and 2 tablespoons olive oil in a bowl.
    2. Coat each side of the lamb chops with the marinade, place into a flat dish and cover with cling film. Marinate in the refrigerator for at least 2 hours (preferably overnight).
    3. Remove the lamb from the refrigerator for 1 hour before cooking (to bring to room temperature).
    4. Preheat oven to 190 C / Gas 5.
    5. To minimise moisture loss, choose a baking dish only wide enough to hold the lamb chops in one layer.
    6. Place onion, mushrooms, black olives and remaining olive oil into the baking dish. Toss well. Add the wine and arrange the lamb chops as a single layer on top.
    7. Cover with foil and bake in preheated oven for 30 minutes.
    8. Remove foil, baste and return to oven uncovered.
    9. Cook for another 30 minutes or until lamb chops are to the desired doneness.
    10. Serve garnished with coriander or parsley.


    Fresh coriander, mint and parsley can be substituted for 2 teaspoons of their dried counterparts.
