Nine layer salad

    This pretty salad has the perfect combination of flavours and textures. The frozen peas are the key in keeping this salad fresh and crisp. Enjoy as a starter or side dish.

    Serves: 8 

    • 1 iceberg lettuce, finely chopped
    • 500g frozen peas
    • 6 hard-boiled eggs, mashed with mayonnaise
    • 500g mature Cheddar cheese, grated
    • 3 tomatoes, sliced
    • 2 carrots, grated
    • 1 cucumber, sliced
    • 6 rashers streaky bacon, chopped
    • For the Mayonnaise Dressing
    • 250ml mayonnaise
    • 125ml cream
    • 1 teaspoon finely chopped garlic
    • 2 teaspoons Dijon mustard

    1. Dry-fry the bacon in a large frying pan until crispy. Drain on kitchen towels until cool.
    2. Make the mayonnaise dressing by mixing together the mayonnaise, cream, garlic and mustard. Set aside.
    3. To assemble: Place lettuce on the bottom of a big glass bowl. Add peas and mashed egg. Smooth over with a spoon.
    4. Sprinkle with cheese. Top in this order - mayonnaise dressing, sliced tomatoes, carrots, cucumber and then bacon.
