Spinach and Ricotta Ham Rolls

    This dish is a little like cannelloni, only ham is used in place of the pasta. Ham is rolled up with spinach and ricotta filling, topped with a creamy sauce and baked. Enjoy with mashed potatoes, if desired.

    Serves: 4 

    • 8 large slices ham
    • 250g ricotta cheese
    • 185ml soured cream
    • 1 egg, lightly beaten
    • 1 small onion, finely chopped
    • 100g cooked, well drained spinach
    • 1 pinch nutmeg
    • 1 pinch dry mustard powder
    • salt and pepper to taste
    • 250ml cream of mushroom soup
    • 4 tablespoons soured cream

    1. Preheat oven to 180 C / Gas 4.
    2. Combine ricotta, soured cream, egg, onion, spinach, nutmeg, mustard and salt and pepper. Place about 2 tablespoons onto each slice of ham and roll up, tucking in edges.
    3. Arrange rolls seam side down in a shallow baking dish.
    4. Combine soup and 4 tablespoons soured cream, spoon over rolls. Bake in preheated oven for 25 minutes.
