Sausage and Goat Cheese En Croute

    Simple sausagemeat is spruced up with lemon zest and thyme, mixed with goat cheese and Parmesan, then wrapped in puff pastry and baked to perfection.

    Makes: 2 - 4 servings

    • 1 tablespoon olive oil
    • 6 spring onions, finely sliced
    • 1 clove garlic, crushed
    • 1 pinch chilli powder
    • 225g sausagemeat
    • 200g goat cheese
    • 2 tablespoons grated Parmesan cheese
    • 1 lemon, zested
    • 1 tablespoons chopped thyme
    • 1 pinch freshly grated nutmeg
    • 1 dash freshly ground black pepper
    • 500g puff pastry
    • 1 egg, beaten

    1. Heat the oil in a frying pan. Add in the spring onions and garlic and saute for 5 minutes over low heat. Cool
    2. Preheat the oven to 200 C / Gas 6.
    3. In a mixing bowl, mix together the sausagemeat, lemon zest, thyme, goat cheese and nutmeg, Season, then add the sauteed onion and garlic.
    4. Roll out the pastry on a floured board into a 30cm x 10cm rectangle. Place the pastry on a baking tray.
    5. Place sausagemeat mixture down the middle. Roll the pastry up into a sausage shape (or you can plait it if you like.)
    6. Brush with beaten egg and bake for 25-30 minutes or until golden and puffy. Serve warm from the oven.
