About this recipe: A delicious vegan-friendly dish, which is perfect for the cold winter nights. Lentils are simmered with vegetables and rice. It's a great meal to make ahead of time.


Serves: 4 

  • 185g uncooked lentils
  • 1 medium carrot, grated
  • 1/2 onion, diced
  • 1/2 green pepper, diced
  • 2 sticks celery, diced
  • 1 tomato, quartered
  • 125g tomato-based pasta sauce, such as Dolmio's
  • 2 tablespoons oil
  • chopped parsley to taste
  • salt and pepper to taste
  • water as needed
  • 285g uncooked rice

  1. Heat olive oil in a large saucepan. Saute the onion until translucent. Add the lentils, carrot, green pepper, celery, tomato, parsley and pasta sauce. Bring to the boil and simmer.
  2. Add enough water to reach atleast 5cm from the rim of the pan. Stir in salt, pepper and parsley. Cover and simmer for 1 hour.
  3. Cook the rice according to the packet's instructions. When cooked, add to the lentils and serve in soup bowls.
