Spiced Apple Cake

    This delicious cake will warm the cockles of your heart. The cake is topped with apples, cinnamon, sugar and nutmeg, then drizzled with an apricot glaze. Enjoy as is or with cream or ice cream.

    Makes: 1 cake

    • For the Cake
    • 125g plain flour
    • 1 1/2 teaspoons baking powder
    • 3 tablespoons sugar
    • 60g butter
    • 4 tablespoons milk
    • 1 egg, well beaten
    • 1 pinch salt
    • For the Topping
    • 2 small green apples, peeled and sliced
    • 3 tablespoons sugar
    • 1 teaspoon ground cinnamon
    • 1/4 teaspoon nutmeg
    • 1 tablespoon melted butter
    • For the Glaze
    • 4 tablespoons apricot jam
    • 1 tablespoon hot water

    1. Preheat oven to 180 C / Gas 4.
    2. For the cake: Sieve flour, baking powder, salt and sugar into a bowl. Rub butter in until the mixture resembles fine breadcrumbs. Stir in egg and milk. Spread mixture into a well greased pie dish.
    3. For the Topping: Arrange sliced apples in a circular pattern to cover cake completely. Mix together sugar, cinnamon and nutmeg, sprinkle over apples. Drizzle with melted butter.
    4. Bake in preheated oven for about 30 minutes.
    5. Meanwhile, make the glaze by mixing together apricot jam and water until smooth. Pass through a sieve and set aside.
    6. Once the cake is cooked, drizzle over glaze.

    This recipe was delicious! The cake is moist, and the apple/spice/apricot topping was perfect! I will definitely serve this again with a small change to the cake batter. The cake layer was a little bland, so next time, I will add a few dashes of vanilla and possibly a little extra cinnamon to the batter.  -  15 May 2013  (Review from Allrecipes AU | NZ)
