These buttery biscuits will simply melt in your mouth. Shortbread biscuits are sandwiched together with a passion fruit icing. Enjoy with a cup of tea or coffee.

Ingredients
Serves: 12
For the Biscuits
250g unsalted butter, softened
1 teaspoon vanilla extract
60g icing sugar
190g plain flour
60g cornflour
For the Cream Filling
85g unsalted butter, softened
80g icing sugar
1 teaspoon strained passion fruit juice

Preheat the oven to 170 C / Gas 3. Grease and line a baking tray with baking parchment.
To make the biscuits: Beat the butter, vanilla and icing sugar in a large bowl until fluffy. Sift together the plain flour and cornflour, then add in two batches, folding through.
Roll 2 teaspoons of mixture to form balls, place them 3cm apart on the tray and flatten slightly with a fork. (If the dough is sticky, lightly flour you hands.)
Bake in preheated oven for 12-15 minutes or until the biscuits are pale golden in colour.
Cool slightly on the tray before transferring to a wire rack to cool fully.
To make the filling: Blend together the butter, icing sugar and passion fruit juice.
Sandwich 2 biscuits together with the icing. Dust with icing sugar and serve. Store any leftovers in an airtight container.
