Chocolate Rice Krispies® biscuits

    These crunchy biscuits are simple and delicious. A chocolate biscuit batter is mixed with sultanas and Rice Krispies, then baked to perfection.

    Serves: 12 

    • 190g self-raising flour
    • 125g butter, softened
    • 1 egg
    • 220g dark brown soft sugar
    • 1 teaspoon vanilla extract
    • 2 tablespoons unsweetened cocoa powder
    • 70g puffed rice cereal, such as Rice Krispies®
    • 165g sultanas

    Prep:15min  ›  Cook:10min  ›  Ready in:25min 

    1. Preheat oven to 180 C / Gas 4. Line baking tray with baking parchment.
    2. Beat together the butter and sugar until light and fluffy.
    3. Beat in the egg and vanilla extract until well incorporated.
    4. Fold in the flour and cocoa powder until well combined.
    5. Stir in the sultanas and puffed rice.
    6. Drop dessertspoons of the mixture on to the prepared tray.
    7. Bake for about 10 minutes in preheated oven.


    You can also use dried apricots or dates in this recipe. Simply chop up the dried fruit and add.

    These biscuits are so quick and easy to make and taste yummy!. I bake a large batch, freeze them and just pop one in the kids' lunchboxes each morning. I change the receipe every time I bake them depending on what I have in the cupboard. It's also a good recipe to bury lots of 'good' things that the kids wont eat. Mine are full of pumpkin and sunflower seeds, dried cherries, blueberries etc (all the things my kids would never eat!!). I whizz it up in the processor and they never know they're there. sometimes I add a few chocolate chunks. I use the basic recipe and just add other stuff. If the mix looks a bit too thick after additons, add a bit of milk to loosen. Definitely a recipe you can play around with.  -  19 Jun 2015


    I never write reviews but everyone loves these biscuits. I make a batch every week and they are perfect for freezing too!! I do not add the sultanas due to my children not liking them and I measure them out in table spoons so it is a smaller treat. these biscuits go so well crumbled on top of vanilla ice cream. thank you for the recipe x x  -  22 Sep 2013
