About this recipe: These treats are perfect for party nibbles and for snacking. A chocolate-coconut biscuit base is topped with a marshmallow topping. Easy, simple and delicious.


Serves: 10 

  • For the Base
  • 2 1/2 biscuits Weetabix cereal, crushed
  • 150g caster sugar
  • 1 teaspoon baking powder
  • 175g butter, melted
  • 75g desiccated coconut
  • 125g plain flour
  • 2 tablespoons unsweetened cocoa powder
  • For the Topping
  • 2 dessertspoons powdered gelatine
  • 400g caster sugar
  • 2 drops food colouring (any colour, optional)
  • 250ml boiling water
  • 1 teaspoon vanilla extract
  • sugar strands or desiccated coconut, for sprinkling (optional)

  1. Preheat oven to 180 C / Gas 4.
  2. To make the base: Combine the crushed Weetabix, sugar, baking powder, melted butter, coconut, flour and cocoa. Mix well. Press the mixture into a tin and bake in preheated oven for 15 minutes.
  3. To make the topping: Dissolve gelatine in boiling water. Add sugar, vanilla extract and food colouring (if using). Beat until thick and fluffy. Cool. Pour over the base whilst still warm. Sprinkle with sugar strands or desiccated coconut.
