Melon with Caraway-Infused Gin

    This is the perfect summer starter or appetiser. It's light, cool and very refreshing. Gin is gently heated with bruised caraway seeds, then served over ripe cantaloupe melon.

    Ingredients
    Serves: 6 

    • 1-2 ripe cantaloupe melons, chopped into bite-sized pieces
    • 1 tablespoon caraway seeds
    • 175-350ml dry gin or to taste

    Method

    1. Divide cantaloupe pieces in serving dishes or goblets.
    2. Lightly bruise caraway seeds with a mortar and pestle. Place them into a small saucepan with the gin. Warm the gin slightly, pour over the melon and serve immediately.
