Curry Spiced Chicken Drumsticks

    These drummers are simple to make, taste delicious and are incredibly tender. Chicken drumsticks are baked with a curry-seasoned yoghurt. Enjoy hot or cold, for lunch or dinner.

    Serves: 6 

    • 18 chicken drumsticks
    • 1 litre plain Greek style yoghurt
    • 1 bunch coriander, chopped
    • 2 teaspoons ground coriander
    • 2 teaspoons ground cumin
    • 2 teaspoons ground turmeric
    • 2 lemons, zest grated and juiced
    • salt
    • 1 teaspoon sugar (optional)

    1. Preheat oven to 180 C / Gas 4.
    2. In a large bowl, mix together the yoghurt, coriander, ground coriander, cumin, turmeric, lemon juice lemon zest, salt and sugar.
    3. Place the chicken into the sauce and coat well. Place onto a baking rack over a large baking tray line with foil. Pour over any leftover sauce on top.
    4. Bake in preheated oven for approximately 1 1/2 hours. Check after 1 hour. When cooked they will be brown and the juices will run clear.
    5. Serve with green beans and a dollop of the yoghurt mixed with cucumber and a bit of lemon juice.
