About this recipe: This dish is a combination of Italian pasta and Mexican chilli con carne. Minced beef is simmered with kidney beans, sweetcorn, pepper and pasta in a spicy tomato sauce.


Makes: 4 

  • 2 onions, sliced
  • 500g minced beef
  • 1 (400g) tin kidney beans, drained
  • 80g sweetcorn kernels
  • 1/2 pepper, sliced
  • 1 (400g) tin tomato soup
  • 1-2 teaspoons chilli powder
  • 1 tablespoons oil
  • 225g pasta shells

  1. Heat oil in a large frying pan and saute onions and pepper. Add the beef and fry until browned. Stir in kidney beans, sweetcorn, tomato soup and chilli powder (to taste).
  2. Simmer for 25 minutes, stirring occasionally.
  3. Meanwhile, bring a large pot of water to the boil. Add pasta to the pot and cook according to the packet's instructions. Drain.
  4. Add cooked pasta to the frying pan. Stir well and simmer for 5 minutes. Serve with crusty bread.
