Carrot and Lentil Soup

About this recipe: A deliciously hearty, vegetarian-friendly pureed soup. Lentils are simmered with carrots in a lightly spiced stock. It's the perfect winter warmer.


Serves: 6 

  • 1 litre stock
  • 190g dried red lentils
  • 1 medium onion, diced
  • 3 carrots, diced
  • 1 stick celery, diced
  • 1 teaspoon dried coriander
  • 1 pinch chilli powder
  • 1 pinch ground ginger

Prep:15min  ›  Cook:25min  ›  Ready in:40min 

  1. Place all ingredients in a large heavy-bottomed saucepan.
  2. Bring to the boil and simmer until lentils are soft.
  3. Season to taste and puree whilst still warm and serve.
