Carrot and Lentil Soup
- 1 litre stock
- 190g dried red lentils
- 1 medium onion, diced
- 3 carrots, diced
- 1 stick celery, diced
- 1 teaspoon dried coriander
- 1 pinch chilli powder
- 1 pinch ground ginger
Prep:15min › Cook:25min › Ready in:40min
- Place all ingredients in a large heavy-bottomed saucepan.
- Bring to the boil and simmer until lentils are soft.
- Season to taste and puree whilst still warm and serve.
