About this recipe: These bars will be loved by both children and adults alike. Jam is sandwiched between peanut butter batter, then baked to perfection. Enjoy as a snack, dessert, afternoon tea or elevenses. They also do well in kid's packed lunches.


Serves: 12 

  • 250g butter, softened
  • 300g caster sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs, beaten
  • 500g peanut butter
  • 375g plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 450g jam
  • 125g chopped peanuts (optional)

  1. Preheat oven to 180 C / Gas 4. Grease a 23cm x 33cm or similar sized tin.
  2. Cream together the butter and sugar until light and fluffy.
  3. Beat in vanilla extract, eggs and peanut butter.
  4. Add flour, baking powder and salt. Stir to combine.
  5. Spread 2/3 batter into prepared tin. Cover with jam and remaining batter. Scatter with peanuts (if using).
  6. Bake for 45 minutes. Cool and slice into bars.
