Beef, aubergine and bulgur bake

    A healthy meal, which is packed full of delicious flavours and textures. Bulgur wheat is baked with green pepper, beef mince and aubergines in a well-seasoned tomato sauce.

    Serves: 4 

    • 500g lean minced beef
    • 1 onion, chopped
    • 4 tablespoons chopped parsley
    • salt and pepper to taste
    • 2 aubergines, sliced 5mm thick
    • 1 green pepper, chopped (optional)
    • 140g bulgur wheat
    • 3 tomatoes, skinned and sliced
    • 125g tomato puree
    • 3 cloves garlic, crushed
    • 125ml water
    • 1 tablespoon olive oil

    1. Preheat oven to 180 C / Gas 4. Sprinkle aubergine slices with salt. Set aside.
    2. Mix the beef with onion, parsley and salt and pepper to taste. Set aside.
    3. Place the tomato puree, garlic, 125ml water and olive oil in a small saucepan. Bring to the boil and boil for 5 minutes.
    4. Rinse the aubergines and place a layer on the bottom of the dish. Pour over 1/3 of the tomato sauce. Arrange sliced tomatoes on top.
    5. Pour bulgur into the dish and cover with the beef mix. Arrange green pepper on top (if using), then cover with another layer of aubergines.
    6. Add the remaining tomato sauce. Cover with foil and bake in preheated oven for 1 1/2 hours.
    7. Remove foil and cook for another 1/2 hour.

    Overall not my most favourite recipe, although I did like the aubergines/eggplants. If I were to make it again I would leave out the bulgur wheat and add a little low fat cheese.  -  19 Jul 2011
