About this recipe: This cake is moist, fruity and delicious. For maximum flavour, use the ripest bananas. For a more indulgent treat, ice with cream cheese icing.


Makes: 1 loaf

  • 200g caster sugar
  • 125g butter
  • 3 ripe bananas, mashed
  • 2 eggs
  • 185g self-raising flour, sifted
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon bicarbonate of soda

  1. Preheat oven to 190 C / Gas 5. Grease and line a loaf tin with baking parchment.
  2. Cream butter and sugar together until light and fluffy. Gradually add eggs, one at a time, beating after each addition. Stir in banana and vanilla extract.
  3. Mix together bicarbonate of soda with milk, stir into the batter. Then fold in flour until well incorporated.
  4. Pour mixture into prepared tin. Bake in preheated oven for 45 minutes or until cake springs back in the middle. Allow to cool on a wire rack.
