Creamy Chocolate Mousse

    A deliciously light and chocolately mousse, which is quick and easy to make. Serve in one large bowl or six individual bowls. Garnish with chocolate curls, if desired.

    Serves: 6 

    • 200g dark cooking chocolate, broken into pieces
    • 2 tablespoons water
    • 2 tablespoons rum
    • 65g caster sugar
    • 2 egg whites
    • 250ml whipping cream

    1. Melt chocolate with rum and water in a double boiler.
    2. Add sugar, stir well and let cool.
    3. Beat egg whites until stiff.
    4. Semi-whip the cream.
    5. Beat the chocolate mixture. Fold in cream, then gently fold in egg white.
