Fruit and Oat Bars

    These bars are soft, oaty and packed full of dried fruit. They are perfect to snack on or pop into packed lunches. If you don't like dried fruit, feel free to add in coconut, chocolate chips or nuts.

    Serves: 12 

    • 160g porridge oats
    • 190g plain flour
    • 110g dark brown soft sugar
    • 1 teaspoon ground cinnamon
    • 250g mixed dried fruit
    • 60g butter
    • 175g honey
    • 175g golden or maple syrup

    1. Preheat oven to 200 C / Gas 6. Grease a 20cm x16cm or similar sized tin.
    2. Make the oat mixture by mixing oats, plain flour, sugar, cinnamon and dried fruit in a bowl, until well combined.
    3. Make the syrup mixture by melting butter, honey and syrup together over a low heat in a small saucepan. Stir occasionally until combined (some butter residue will sit on top).
    4. Pour syrup mixture into the oat mixture and mix until it all clumps together.
    5. Press the final mixture into the prepared tin and bake for 15-20 minutes. It is ready when a knife is inserted and comes out clean.
    6. Allow to cool to room temperature in tin. Cut into bars, serve and enjoy!

    Needed some tweaking. Even with a sweet tooth I found the original recipe way too much so I took out the golden syrup and put in the same amount of walnuts. The oils from them kept it nice and moist without being sickly sweet. Seriously good.  -  25 Mar 2015
