Simple Mushroom Sauce

    This sauce is a fantastic alternative to gravy. You can either serve it chunky or strain it for a smooth sauce. Whichever way, it's delicious!

    Serves: 4 

    • 1 medium onion, diced
    • 2 tablespoons olive oil
    • 1 tablespoon plain flour
    • 2 tomatoes, diced
    • 125g mushrooms, finely chopped
    • 300ml vegetable stock
    • 1/2 teaspoon oregano or thyme
    • 1 bay leaf
    • 1 teaspoon vegemite
    • 1 generous splash red wine
    • salt and pepper to taste

    1. Heat oil in a large frying pan. Saute onion until brown. Add tomatoes and continue to cook, stirring until liquid has evaporated.
    2. Add flour, stir, then add stock. Stir well, then bring sauce to the boil. Continue stirring until sauce thickens.
    3. Stir in mushrooms, herbs, vegemite and red wine. Simmer for 20 minutes, stirring occasionally. Season to taste and serve strained or unstrained.

    Definetely I will make this sauce again. Apart from the fact that it is easy to cook it smells and tasted really good. Instead of the tomatoes I used chopped canned tomatoes, removed the vegetable stock and put some rock salt (less than half a tsp). End result - delicious  -  01 Feb 2012
