Cranberry coleslaw

    Sweet, tart and crunchy, this unusual and colourful coleslaw is enlivened by a combination of cabbage, cranberries and orange slices.

    Serves: 10 

    • 100g (4 oz) cranberries, halved
    • 50g (2 oz) caster sugar
    • 2 oranges, peeled and thinly sliced
    • 1 red onion, thinly sliced
    • 275g (10 oz) shredded cabbage
    • 1 large apple - peeled, cored and chopped
    • 4 tablespoons mayonnaise

    1. In a small bowl, toss together the cranberries and sugar. Cover and refrigerate.
    2. In a large bowl, toss together the oranges, onion, cabbage, apple and mayonnaise until evenly coated. When ready to serve, add cranberry mixture and toss again.

    People can't get enough of this salad. No matter how much we make, people finish it off. With no fresh cranberries, we use dried. We also add a good splash of white wine vinegar for a litle pizzazz. Make sure the cabbage is just one of the ingredients, not a major player.  -  15 Aug 2005  (Review from Allrecipes US | Canada)


    This was a delicious change to coleslaw or cabbage salad. I used dried orange-flavoured cranberries instead of the sugared cranberries and I think it worked well.
