Cranberry coleslaw

    Sweet, tart and crunchy, this unusual and colourful coleslaw is enlivened by a combination of cabbage, cranberries and orange slices.

    Ingredients
    Serves: 10 

    • 100g (4 oz) cranberries, halved
    • 50g (2 oz) caster sugar
    • 2 oranges, peeled and thinly sliced
    • 1 red onion, thinly sliced
    • 275g (10 oz) shredded cabbage
    • 1 large apple - peeled, cored and chopped
    • 4 tablespoons mayonnaise

    Method

    1. In a small bowl, toss together the cranberries and sugar. Cover and refrigerate.
    2. In a large bowl, toss together the oranges, onion, cabbage, apple and mayonnaise until evenly coated. When ready to serve, add cranberry mixture and toss again.

    People can't get enough of this salad. No matter how much we make, people finish it off. With no fresh cranberries, we use dried. We also add a good splash of white wine vinegar for a litle pizzazz. Make sure the cabbage is just one of the ingredients, not a major player.  -  15 Aug 2005  (Review from Allrecipes US | Canada)

    This was a delicious change to coleslaw or cabbage salad. I used dried orange-flavoured cranberries instead of the sugared cranberries and I think it worked well. I think I will use canned drained mandarin oranges next time. I made this for a Mother's Day supper and everyone loved it!  -  13 May 2003  (Review from Allrecipes US | Canada)

    Zing! I made this for a Christmas potluck dinner last night. Came home with an empty bowl. The cranberries really liven up the cole slaw while the apples balance out their tartness. It's a winner!  -  30 Dec 2007  (Review from Allrecipes US | Canada)
